Off Topic Tuesday ~ Gluten Free English Muffin Bread

Hey everyone. I am breaking from our regularly scheduled program to tell you about this amazing bread recipe. I found this amazing looking quick bread recipe on Pinterest and I thought this one would be perfect to adapt to gluten free.

I did make the regular recipe, except I halved it, for the kids. We ate it with turkey and gravy for dinner, instead of biscuits. For myself, I made a gluten free version. YUM!!!!!! That's all I have to say.

Gluten Free English Muffin Bread

I cup rice flour (or millet or amaranth or a mix of all three)
1 Cup garbanzo flour
1 Cup tapioca flour
1 1/2 teaspoons xanthan or guar gum
2 Cups very warm water
1 package rapid rise yeast

Mix all ingredients together. It will be the consistency of pancake batter, not as thick as in Jillee's photos. Let rise for 20 minutes and bake at 350 for 45 minutes. Let cool completely.

Now, let's be honest. When I made this, I did cut right into the hot loaf. When you are as starved for good bread as I am there is no willpower.

It rose nice and big. It fell a little in the middle but no matter . . . . .

. . . . cuz look how airy it is inside the loaf. Its not as fluffy as regular bread but for gluten free? Its airy.

Its really too bad this photo came out fuzzy. I cannot fix it because I ATE it. OMG, this bread is so stinkin' GOOD! I am in serious danger of eating this entire loaf before the sun goes down.
