Fluffiest Gluten Free Vegan Pancakes

One major problem I have with gluten free pancakes is that they are flatter than, well, a pancake. Runny and they don't rise. And I am waaayyyy too cheap to always buy the gluten free mix they have at the grocery store now (as good as it is....). So today I experimented. Here is what I came up with:


Gluten Free Vegan Pancakes 

  • 1/3 cup brown rice flour
  • 1/3 cup garbanzo flour
  • 1/3 cup tapioca flour
  • 1 teaspoon xanthan gum
  • 2 tablespoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons ground flax seed
  • 4 tablespoons water
  • 1 cup non dairy milk
Mix dry ingredients together. In a separate bowl, mix the water with the ground flax. Add the non dairy milk and combine. Add this mixture to the flour mixture and mix until ingredients are combined. You will see the batter get fluffy right away.

Preheat your pan to medium. I coated the pan with coconut oil. Use whatever your preference is, cooking spray, olive oil, etc. Keep in mind that these pancakes soak up A. LOT. of oil. Check out how they rise in the pan!

I used garbanzo flour in this recipe for the protein. You could also use soy flour. If you're not worried about the protein, you could substitute another type of flour here too. Me, I need to balance out all of the carbs with some protein or I end up with a sugar rush. In a bad, OMG I think I'm diabetic! kind of rush. Not fun.

Oh, yes I did. I poured blueberry flavored HFCS all over these pancakes. Not worth it. Real maple syrup would have been a lot better.....

The conclusion: They didn't taste as pretty as they look. I forgot to add the sugar and they were gummy in the middle. Next time I will cook them for longer on a lower heat. And, I'll remember the sugar. And, I will stay away from the fake purple syrup!
