Gluten Free Challenge - Microwave Brownie


I have been seeing mug brownies everywhere. On Pinterest, on Dr Oz and in my dreams. I do miss gooey, chocolaty brownie desserts so I challenged myself to do it gluten free. It wasn't a challenge really, I just changed the flour to Bob's Red Mill gluten free all purpose flour.

I did everything else the same after switching out the flour and I used olive oil as the oil in the recipe. I will bet that coconut oil would be divine too.

 Amazing, right? See that part that still looks wet? Doesn't matter 'cuz there are no eggs in here. Ooey, gooey deliciousness.

Because I loooove whipped cream and because I have raw cream in my house right now, I whipped a bit up to top my brownie. I know, this looks like soft serve ice cream. It's not. It's fresh whipped cream. YUM!

 I like to add a bit of powdered sugar to sweeten and stabilize my whipped cream. Stabilization didn't much matter here because it was gone so fast. Mmmmmmmmmmmmmmm

I will do this again. Hopefully not daily. That would be bad.....
